Location: a high quality/small volume AOC LANGUEDOC vineyard, on the historical SAINT GEORGES D’ORQUES Terroir, 10 km West of MONTPELLIER. The vineyard spreads on hills with East/South exposure, 100m above sea level. The vines look over the Cistercian Abbey of VIGNOGOUL and the coastal plain, with enjoyable refreshing sea mists at certain warm periods of the year, in a totally organic surrounding of garrigue and holm oak forests.

Estate Area: vineyard of 8 ha of which 4,5 ha planted with vines.

Soil : very rocky clay-limestone soil, adding minerality.

Mediterranean grape varieties – Low crop yields (15 to 30 hl/ha)

Red: Syrah (1998), Mourvedre (2002)

White: Roussanne (1998), Grenache Blanc (1996)

Rosé : Grenache Noir (2011), Mourvedre (2002)

Viticulture: certified organic since 2007 (ECOCERT), implementation of biodynamic methods.

Harvest: the grapes are hand-picked, collected in small crates and then sorted. The cellar is underground and the grapes fall into the vat by gravity.

Vinification: raw material treated with the utmost care in order to preserve the natural elegance and balance of the wine. Fine and authentic wines. Natural yeasts. Very low total SO: 25 to 40 mg/l for the Red wine and 20 to 25 mg/l for the White wine.

Wine ageing : vat and oak barrels, about 4 months for white wines and 10 months for red wines.

The winemaker : Bertrand de MORTILLET, a graduate in oenology at Bordeaux Blanquefort, manages the Domaine de la PROSE wine-estate, of which the MAS de la RIME was part until 2009. Bertrand continues to make wine for the MAS DE LA RIME according to the same methods of viticuture and ageing.
